Why do TV tournament poker dealers give cards to themselves?

They are never shown playing on TV, so what's the point of dealers giving cards to themselves?

In Texas Hold'em, there's a procedure of dealing that involves something called 'burning' a card.

When the dealer deals the flop, the first thing he/she does is discards the top card of the deck, then puts the first three cards out. Same procedure for the turn, discarding the top card, then putting one card out, and the same for the river.

Those cards aren't 'going to the dealer' persae, they're being discarded from the top of the deck. This prevents anyone who might have seen the top card of the deck from having an unfair advantage over the other players.
